Green Chile Salsa

Ole... Green Chile Salsa!

°10 small green tomatoes  (cut in half)
°3 garlic cloves
°1/2 of a small onion
°5 serrano jalapeños
°1 avocado
°1/2 cup of water
°1/2 lemon

Combined and blend

In a large bowl  add:
°2 avocados (diced)
°1/2 red onion (diced)
° cilantro
°red tomatoe (diced)

Add the blended green salsa to the diced ingredients.

Nom nom.

Pumpkin everything BUT gluten free!

Who's ready for Pumpkin everything?  I am but those already made muffins aren't always gluten free so let me help you. :)

●Gluten Free Pumpkin Muffins●

Baker Josef's Gluten free pumpkin bread and muffin mix from Trader Joes.

•follow the mix instructions on the box
•for the baking -I baked at 350° for 20 mins. Let cool on a rack or fridge to keep moisture in. (5 to 10 mins )

●Icing●
•2 tablespoons of coconut sugar
•2 tablespoons of coconut flakes
•1 tablespoons of honey
•AND just a small amount of almond or soy milk

•Drizzle icing on top of the muffins and add sprinkles for fun.

Rachaels Green Enchiladas

Ingredients:

□3 chicken breast
□1 can low sodium black beans
□1 1/2 cups cottage cheese
□7 oz diced green chilies
□1 large can of green enchilada sauce
□1 package of herbalife chicken soup mix □1 cup of quinoa
□1 package of whole wheat tortillas
□1 small package of shredded cheese

Prep:

□ chicken-bake at 350° for 20 minute.Shred and place to the side.
□quinoa-2 cups of water, 1 drop of olive oil and bring to a boil. Cook for 15 minutes and place to the side.
□cottage cheese and  herbalife chicken soup mix- blend together.
□beans- drain and rinse.

Filling for the tortillas:

□once quinoa is cooled mix in the shredded chicken, beans, diced chilies and cottage cheese / herbalife soup mix.

Directions and Baking:

□fill tortillas with the mixture and roll up. Once the glass is filled with the rolled up tortillas pour the enchilada sauce on top and sprinkle cheese.

□place into the oven at 350° for 20 minutes and it's done.

Herbalife, Chocolate Lava Mug Cake

Don't worry, you can still have your cake and eat it too.

Herbalife Chocolate Lava Mug Cake

Ingredients:
■1/4 Cup Herbalife Chocolate F1
■1 Tablespoon of Cocoa Powder
■1 Egg
■1 Tablespoon of either unsweetened soy milk or protein plus flaxseed milk
■2 Tablespoons of Coconut Sugar  (don't use any other sugar)

Directions:
■Mix all ingredients in a mug (I use a taller mug)
■Microwave for 50 seconds or less (depends on your microwave but you don't want to over cook it.)
■NOM NOM
■OKAY,now just drizzle a little agave syrup, coconut flakes and coconut sugar on top...Enjoy♡

Avocado....really?!?

If I didn't tell you would you have really known?

Chocolate Avocado Pudding

■2 Ripe Avocados
■3 Quarter cups of coconut nut sugar  (low on the glycemic and not highly processed)
■1 tsp of vanilla
■1 1\2 scoops of herbalife chocolate f1
■2 tablespoons of cocoa
■1\2 cup of water

*blend up*

Pour into glass dishes and refrigerate for 30 minutes.

Yummy chocolate pudding.♡

It's not a diet but a LIFESTYLE...Sunday Prep.

Turkey Meatballs

1 package of lean turkey
Himalayan salt to taste
Mustard to taste
Paprika to taste
1 large egg (egg whites)
3/4 rolled oats
2 cloves of garlic
Some chopped parsley
1 tablespoons of Bruschetta (less sugars and sodium)
•combine ingredients•

Preheat oven to 375°
Roll mixture into meatballs and place on baking sheet.
Bake 15 to 20 minutes.

Enjoy.

***Oh and don't forget to fill up your tablet box. The tablets help fill in the nutritional  gaps we don't get from food.

Quinoa Bars w/ Chocolate Glaze

Are you looking for a protein packed snack? I know i was on Sunday and as a result I made this.

1 cup of quinoa to 2 cups of water- bring to a boil 15 minutes - set aside to cool (I placed mine in the fridge).

Liquid Ingredients (place in one bowl)

3 eggs.

1/2 cup of vanilla almond or flaxseed milk.

1/3 cup of honey
2 tablespoons of coconut oil.

Vanilla, cinnamon, and salt to taste .

Mix well.  Now make sure the Quinoa is cool because you do not want to cook the the eggs.

Slowly fold in the liquid mixture with the Quinoa.

Heat Oven  to 375°

In a 8x8 pan line it with parchment paper. Pour the  mixture in the pan and bake for 20 to 25 minutes.

***healthy frosting what***
2 tablespoons of crunchy peanut butter.
1 1/2 tablespoons of coconut oil
1 tablespoons of honey
1 scoop of herbalife chocolate f1 AND a sprinkle of cocoa powder.

Once  the Quinoa is done pull up out of the pan and place on a cooling rack.
Drizzle the frosting on top and place  in the fridge to cool.

Healthy and Yummy Snack

Sometimes you just want a healthy snack, right?

Snacking is okay as long as it's the right combination of  nutrients and it's  in moderation.

Apples - a wealth of vitamins,  and a great source of fiber. After all,  as a child I was told "an apple a day, keeps the doctor away."

Pumpkin Seeds - valued for the zinc.

Chia Seeds - Naturally  gluten / grain free. It has more calcium than a glass of  milk and it's great as an egg substitute.

Peanut Butter - Provides protein,  fiber,  vitamin E and it's a GOOD fat.

In a small  bowl I chopped up a small red apple, mixed in  with 2 tsp of peanut butter, chia seeds and pumpkin seeds... ENJOY!

During my sophomore year of college I was diagnosed with Celiac disease, lost my father, lived in a toxic environment and I gained a lot weight.

I have turned it all around, got my fun, healthy active lifestyle and want to pass it forward to others.

So please join me on this continuing journey and experience to help others achieve their goals through a fun, healthy, active lifestyle.
